Wash the oysters in running water by rubbing them with a hard brush. Open the shells with a knife of your own, being careful to take advantage of the liquid that surrounds the core.


oyster Soup Shell
– 50 oysters
– 1,5 dl dry white wine
– 2 tablespoons butter
– 300 g of onion
– 2 tablespoons tomato paste
– 30 g corn starch
– 1 lemon
– salt and pepper q.s.

For bread croutons:

– 1 mixing bread
– 50 g butter

  1. Wash the oysters very well. Open them with a suitable knife, reserve the kernel and juice.
  2. Bake in a casserole the oysters with the white wine and the juice that has been reserved.
  3. Remove the oysters, cut into pieces and set aside.
  4. Pour the broth into a plate and set aside. Golden in butter the onion, previously peeled and chopped.
  5. Add the tomato pulp, the cooked oyster broth and bring to the boil. Dissolve the corn starch in cold water. Add to broth, stirring constantly.
  6. Bring to a boil and season with salt and pepper.
  7. Remove from the heat and add the lemon juice and the oysters. Butter the bread, cut into small cubes. Serve the soup with the croutons of bread aside.
