Healthy Vegetarian Choice Diet
May Improve Mood
Arachidonic acid is a substance that usually comes from dietary animal sources and, no surprise, vegetarian diets are not high in arachidonic acid. This can be beneficial, as research has shown a link between arachidonic acid and mood disturbances. Researchers at Benedictine University performed a study to investigate the impact of restricting animal products and mood and confirmed that mood improvements do happen when eating meat, fish, and poultry are restricted. Mental health surveys amongst vegetarians and found them to have lower levels of neuroticism.
Reasons Vegetarians Live Longer:
Low blood pressure
in the latest study, researchers found that not only do vegetarians have lower blood pressure on average, but that vegetarian diets could be used to lower blood pressure among people who need an intervention.
Lower risk of cancer:
Researchers at Loma Linda University in California studied different versions of the vegetarian diet and cancer risk among people at a low risk for cancer overall and discovered that a vegetarian diet may have protective benefits. Although the study is not the final say on the matter, vegans had the lowest risk for cancers, specifically cancers most common among women, like breast cancer.
A large body of scientific literature suggests that the consumption of a diet of whole grains, legumes, vegetables, nuts, and fruits, with the avoidance of meat and high-fat animal products, along with a regular exercise program is consistently associated with lower blood cholesterol levels, lower blood pressure, less obesity and consequently less heart disease, stroke, diabetes, cancer, and mortality.
In African-Americans, the frequent consumption of nuts, fruits and green salads was associated with 35-44 percent lower risk of overall mortality.
Cancer Protection: Vegetarian Choice
Over 200 studies have revealed that a regular consumption of fruits and vegetables provides significant protection against cancer at many sites. People who consume higher amounts of fruits and vegetables have about one-half the risk of cancer, especially the epithelial cancers. The risk of most cancers was 20-50% lower in those with a high versus a low consumption of whole grains.
Vegetarians Usually Have Low Cholesterol. There is no health benefit, at all, to eating animal fat. It should come as no surprise that when you remove it from your diet, you will also remove the detrimental effects it has on your health life. After examining the long term effects of following a vegetarian diet, Korean researchers very comfortably concluded that body fat, and cholesterol levels were lower in vegetarians than omnivores.
Animal Welfare: Vegetarian Choice
No animal is harmed in order to feed or clothe a vegetarian. As less people eat meat, there is a reduced requirement for the farming of livestock for meat. This means less need for intensive farming methods. As more people become vegetarian, farming and the meat production industry will change. There are many real health advantages of being a vegetarian. Over recent years the impact of meat in our diets has been studied and researched. Some people will say that it is unnatural for humans to eat meat, others will say that it is a totally natural process.
What is certain, however, is the modern meat-eaters diet includes a greater proportion of meat than that of our ancestors. This increase can cause health problems for a variety of reasons.
A growing body of scientific evidence indicates that wholesome vegetarian diets offer distinct advantages compared to diets containing meat and other foods of animal origin. The benefits arise from lower intakes of saturated fat, cholesterol and animal protein as well as higher intakes of complex carbohydrates, dietary fiber, magnesium, folic acid, vitamin C and E, carotenoids and other phytochemicals.
Since vegetarians consume widely divergent diets, a differentiation between various types of vegetarian diets is necessary. Indeed, many contradictions and misunderstandings concerning vegetarianism are due to scientific data from studies without this differentiation. In the past, vegetarian diets have been described as being deficient in several nutrients including protein, iron, zinc, calcium, vitamin B12 and A, n-3 fatty acids and iodine. Numerous studies have demonstrated that the observed deficiencies are usually due to poor meal planning.
Well-balanced vegetarian diets are appropriate for all stages of the life cycle, including children, adolescents, pregnant and lactating women, the elderly and competitive athletes. In most cases, vegetarian diets are beneficial in the prevention and treatment of certain diseases, such as cardiovascular disease, hypertension, diabetes, cancer, osteoporosis, renal disease and dementia, as well as diverticular disease, gallstones and rheumatoid arthritis. The reasons for choosing a vegetarian diet often go beyond health and well-being and include among others economical, ecological and social concerns. The influences of these aspects of vegetarian diets are the subject of the new field of nutritional ecology that is concerned with sustainable life styles and human development.
Vegetarian Choice diets also help prevent heart disease
Animal products are the main source of saturated fat and the only source of cholesterol in the diet. Vegetarians avoid these risky products. Additionally, fiber helps reduce cholesterol levels15 and animal products contain no fiber.
When individuals switch to a high-fiber, low-fat diet their serum cholesterol levels often drop dramatically. Studies have demonstrated that a low-fat, high-fiber, vegetarian or vegan diet combined with stress reduction techniques, smoking cessation, and exercise, or combined with prudent drug intervention, could actually reverse atherosclerosis—hardening of the arteries. Heart diets that include lean meat, dairy products, and chicken are much less effective, usually only slowing the process of atherosclerosis.
Asthma: A 1985 Swedish study demonstrated that individuals with asthma practicing a vegan diet for a full year have a marked decrease in the need for medications and in the frequency and severity of asthma attacks. Twenty-two of the 24 subjects reported improvement by the end of the year.
Special Concerns: Pregnancy, Infants, and Children

The American Dietetic Association has found vegan diets adequate for fulfilling nutritional needs during pregnancy, but pregnant women and nursing mothers should supplement their diets with vitamins B12 and D
Most doctors also recommend that pregnant women supplement their diet with iron and folic acid, although vegetarians normally consume more folic acid than meat-eaters. Vegetarian women have a lower incidence of pre-eclampsia in pregnancy and significantly more pure breast milk. Analyses of vegetarians breast milk show that the levels of environmental contaminants in their milk are much lower than in non-vegetarians.
Studies have also shown that in families with a history of food allergies, when women abstain from allergenic foods, including milk, meat, and fish, during pregnancy, they are less likely to pass allergies onto the infant. Mothers who drink milk pass cow antibodies along to their nursing infants through their breast milk. These antibodies can cause colic.
Potassium balances water and acidity in your body and stimulates the kidneys to eliminate toxins. Diets high in potassium have shown to reduce the risk of cardiovascular diseases and cancer.
Aiding in the absorption of calcium, magnesium is an often overlooked vitamin in importance to a healthy diet. Nuts, seeds, and dark leafy greens are an excellent source of magnesium.
Vegetarian Choice: Protein
That protein is good for your body is no surprise. It may be a surprise to learn that most Americans eat too much protein and in forms such as red meat that are not healthy ways of getting protein. Beans, nuts, peas, lentils, and soy products are all great ways to get the right amount of protein in a vegan diet.

The Humane Society of the United States estimates that if every American cut out meat just once a week, about 1.4 billion animals could be spared each year.

The average meat-eater is responsible for the abuse and death of about 90 animals per year.
